One of my favourite healthy energy snacks




A few months ago I discovered Deliciously Ella's Almond and Chia Energy Bites, which have quickly become one of my favourite snacks. They are really easy to whiz up and the recipe makes enough to last a couple of weeks.


I have made a slight variation to the energy bites (mainly due to the fact that I didn't want to splash out and purchase the more expensive Medjool dates). Instead of using the 2 cups of Medjool dates, I just used ordinary pitted dates. While you may get a sweeter and more caramelised taste with the Medjool dates, I find that the pitted dates work as a great substitute if you don't want to spend more money.  You can also soak the dates in water for 20 minutes before blending them up, which helps to soften them.

Almond and Chia Energy Bites


You'll need:

- 1 cup of almonds
- 2 cups of pitted dates
- 4 tablespoons of cacao powder
- 2 tablespoons of almond spread (I use the Macro brand)
- 2 tablespoons of coconut oil
- 2 tablespoons of chia seeds

1. Pour the almonds into a food processor and blitz them up until they are evenly crumbled.


2. Add all other ingredients to the food processor and blend together. You may need to add a little bit of water if the mixture is too dry.



3. Once everything is evenly blended, roll the mixture into small, bite size pieces and place them in the freezer for an hour.


4. When they have hardened in the freezer, they are ready to eat. They can then be stored in the fridge in an airtight container.
