A healthy orange cake



I've been trying to find some healthy-ish alternatives to bake lately (it's all about balance...one week it's tim tam cookies, the next it's a healthy cake), and I remembered reading a recipe on Amelia Liana's blog a month or so ago for a healthy orange cake. So, I decided to give this a go last weekend, and it was definitely a winner. As it is gluten free, it is an incredibly moist cake, and the balance of the zesty orange with the honey sauce makes for a really nice snack or dessert option. It also only has 5 ingredients, so is really easy to whip together.

You'll need:

- 3 oranges
- 1/2 a cup of honey (plus an extra tablespoon for the sauce)
- 250g of almond meal
- 4 eggs
- 2 teaspoons of baking soda

1. Place two of the oranges in a saucepan with enough water to cover, and boil for an hour.
2. Blend the whole oranges in a food processor, then pre-heat the oven to 180 degrees.

 3. Beat the honey and eggs together, then slowly add in the baking soda, followed by the orange puree and almond meal.

4. Pour the mixture into a cake tin (don't make the mistake I did, and make sure you grease the tin beforehand, as there is no oil/butter in the cake), then bake for 40-45 minutes.


5. Mix the juice of the last orange with a tablespoon of honey, melt in the microwave for about 30 seconds, then pour over the cake (and serve with ice cream if you like).
