Flourless choc-chunk peppermint brownies


As it is the first weekend of December, I thought I'd bring a bit of festive cheer to the blog with a Christmas-themed recipe.

One of my favourite things to bake is a batch of gooey brownies, and I love the flavour of mint chocolate, so I thought I'd combine the two and create some peppermint chocolate brownies this weekend. The basis of these brownies is almond meal, so they are gluten free for anyone looking to avoid gluten over the festive season (although to call these healthy would be a pretty big stretch).

You'll need:


- 125g butter, chopped
- 125g Lindt 70% dark chocolate, chopped
- 100g Lindt mint dark chocolate, chopped
- 1 1/2 cups caster sugar
- 100g almond meal
- 3 eggs
- 1/4 cup cacao powder
- 1 tsp vanilla essence
- 1 tsp peppermint essence
- 3 candy canes, crushed


1. Preheat oven to 180 degrees celsius.

2. Melt the 70% dark chocolate and the butter together in the microwave for 1 minute then stir until smooth.

3. Transfer to a large bowl and stir in the sugar, almond meal, whisked eggs, cacao, vanilla essence and peppermint essence until combined, then add in the chopped mint chocolate and stir to combine.

4. Pour mixture into a tin and bake for 30 minutes.

5.  Sprinkle with crushed candy canes, cut into squares, and enjoy!
