Festive choc mint truffles


If you are looking for a last-minute sweet snack or dessert to make for Christmas, these truffles are so easy to whip together and only require four ingredients - perfect if you are short on time in the hectic lead-up to Christmas.


You'll need:


  • 300g dark chocolate (at least 70% solids), broken into small pieces
  • 1 cup thickened cream
  • 1 tsp peppermint extract
  • 1/2 cup cocoa powder

1. Place the cream in a saucepan on medium heat and stir until it starts to boil, then remove from the heat.

2. Add 200g of the chocolate to the cream (keeping the other 100g aside), along with the peppermint extract, and stir together carefully until smooth.

3. Pour the ganache mixture into a bowl and place in the fridge to set for at least 4 hours.

4. Melt the remaining 100g chocolate in the microwave on high for 2 minutes, stirring halfway through.

5. Once the ganache mixture has set, roll it into balls using a teaspoon and your hands, then dip each ball into the melted chocolate and place on a tray lined with baking paper.

6. Place the balls in the fridge and allow to set for 1 hour.

7. Place the cocoa powder in a bowl, then roll each ball into the cocoa powder until coated.

8. Serve alongside a cup of tea or coffee, or as a post-Christmas dinner snack.
