Chocolate peanut energy balls

Recently I've been playing around with a few different recipes for energy balls, as I find they are a great snack to have for a morning energy hit along with my cup of tea around 10am each day. I love the combination of peanut and chocolate, so thought I'd throw together the below ingredients to create a pretty healthy and delicious kick of energy for the mid-morning hunger pangs. 

I know that there few things more frustrating in life than when you search for a recipe and have to read through paragraphs and paragraphs of information before getting to the actual recipe, so here it is: 


You’ll need: 

    • 2 cups medjool dates, pitted (approx. 15 dates) 
    • ½ cup peanut butter 
    • ½ cup cashews 
    • 2 tbs chia seeds 
    • 3 tbs cacao powder 
    • 1 tbs water
  1. Place all ingredients in a food processor and blend to combine 
  2. If mixture is too dry, add another tablespoon or two of water and blend further
  3. Roll mixture into balls and place in an airtight container (it should make about 16 balls) 
  4. Place container in the freezer for an hour, before transferring to the fridge, then enjoy!
