Caramel dark choc chip fudge

With the festive season coming up, and an abundance of Christmas parties and social events to look forward to, I thought I'd create a sweet treat that is extremely easy to whip together to take as a dessert or snack for your friends and family. The sweetness of the caramel fudge is balanced out by the dark chocolate chips on top, and the recipe only requires a few minutes of actual work, making it a great option if life is incredibly busy for you at this time of year.

You'll need:

- 2 cups dark brown sugar

- 1/3 cup liquid glucose

- 1/3 cup golden syrup

- 1 tsp vanilla essence

- 2x 395g cans skimmed condensed milk

- 250g butter, chopped

- 360g white chocolate, broken into pieces 

- 100g dark choc chips

1. Place the brown sugar, liquid glucose, golden syrup, vanilla essence, condensed milk and butter in a heatproof bowl and microwave on a medium heat for 10 minutes, stirring every 2 minutes.

2. Stir the white chocolate pieces through the bubbling fudge mixture until all melted.

3. Pour the fudge into a large baking tin (lined with baking paper) and allow to cool at room temperature for an hour.

4. Sprinkle the dark choc chips on top of the fudge, lightly pressing them into the mixture, then place in the fridge to set for 2-3 hours.

5. Slice into squares and enjoy!
