Peppermint ganache tart


This recipe is a festive take on one of the recipes in my cookbook - the no-bake chocolate ganache tart. I love a bit of mint chocolate in my desserts, and this recipe incorporates both mint flavoured chocolate and peppermint candy canes to give that refreshing hit with the rich chocolate. As this recipe doesn't require any baking, and only includes a few ingredients, it is a very simple one to whip up for the busy festive season.

You'll need:

  • 250g chocolate flavoured biscuits
  • 125g butter, melted
  • 200g dark mint flavoured chocolate, chopped
  • 300mL thickened cream
  • 4 peppermint flavoured candy canes, roughly chopped

1. Place the biscuits in a food processor and blitz until fine crumbs form.

2. Add the melted butter to the biscuits and mix in well.

3. Evenly press the biscuit mixture into the base of a tart tin, then place in the fridge for 30 minutes.

4. Meanwhile, place the cream in a saucepan on medium heat until it comes to the boil.

5. Place the chocolate into a bowl then pour over the cream, stirring until all the chocolate is melted.

6. Pour the ganache into the tart tin, then sprinkle the candy cane pieces on top.

7. Place in the fridge to set for at least 2 hours.
