My current favourite breakfast

I have always thought of breakfast as the best meal of the day. It really does get me out of bed in the morning, and I would happily eat breakfast food at any time of the day or night (case in point...the photos for this post were taken when I was making porridge for dinner one evening when Dave was on a night shift). I also absolutely love going out to a cafe for breakfast or brunch, especially if the cafe does all-day brunch...who says you can't eat pancakes at 4pm?

For the past 8 months or so, I have been living off the same breakfast each morning - banana and cinnamon porridge with chia seeds, pumpkin seeds and almond butter - and I am still not at all sick of it. I'm sure as the weather starts warming up, I'll make some variations to it, but at the moment I'm still happy to whip this up every morning.

 

You'll need:

- 1/2 a cup of rolled oats
- 1 banana (the riper, the better)
- Approximately 1/2 a cup of milk
- 1 teaspoon of chia seeds
- 1 teaspoon of almond butter
- 1/2 a teaspoon of ground cinnamon
- A sprinkling of pumpkin seeds



1. Place the oats and chia seeds in a bowl and mix together.


2. Slice the banana on top, then pour the milk on top (enough to cover the oats).

3. Place in the microwave for 2 minutes, then top with almond butter, cinnamon and pumpkin seeds.
